The quality of your completed job will be much better if you remove the doors and fixtures. It may seem time consuming but once the doors are off you will be able to stain the whole cabinet quickly and efficiently.
You probably will not need to remove the hinges from the doors as long as you keep a clean rag near by and wipe them regularly during the staining process. Once you are finished staining (and varnishing if necessary), re-attach the doors - and you are left with a nice, clean job.
